Watermelon and Strawberry Jam
Preparation time: 10 minutes plus steeping overnight
Cooking time: 1 hour 20 minutes
300g watermelon
200g strawberries, calyx removed and sliced in half
350g white sugar
Juice, seeds and zest of 2 lemons
½ teaspoon Rosewater
METHOD
- Sterilize jars
- Chop watermelon and strawberries.
- Place the watermelon,lemon juice, sugar and strawberries in a large saucepan and cook over high heat. Let it boil.
- Tie zest and seeds in muslin and place in fruit mixture.
- Lower heat and simmer for 35-45 minutes or until jam is set.
- Add rose water.
- Ladle into jars and label.
